Ingredients:
For the Bread:
1/3 cup brown sugar
1 teaspoon ground cinnamon
2/3 cup granulated sugar
1/2 cup unsalted butter, softened
2 large eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
For the Apple Mixture:
2 large apples, peeled and chopped
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
For the Glaze:
1/2 cup powdered sugar
2 tablespoons milk
Instructions:
Preheat Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
Prepare Apple Mixture: In a medium bowl, mix the apples, 2 tablespoons of sugar, and 1 teaspoon of cinnamon. Set aside.
Prepare Cinnamon Sugar: In a small bowl, mix the brown sugar and 1 teaspoon of cinnamon. Set aside.
Prepare Batter:
In a large mixing bowl, cream together the granulated sugar and butter until light and fluffy.
Add the eggs one at a time, beating well after each addition.
Add the vanilla extract and mix until combined.
In a separate bowl, whisk together the flour and baking powder.
Gradually add the flour mixture to the butter mixture, alternating with the milk, beginning and ending with the flour mixture. Mix until just combined.
Assemble Bread:
Pour half of the batter into the prepared loaf pan.
Add half of the apple mixture on top of the batter.
Sprinkle half of the brown sugar and cinnamon mixture over the apples.
Pour the remaining batter over the apple layer.
Top with the remaining apples and then sprinkle the rest of the brown sugar and cinnamon mixture over the apples.
Bake: Bake in the preheated oven for about 60-70 minutes, or until a toothpick inserted into the center of the bread comes out clean.
Cool and Glaze:
Let the bread cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
In a small bowl, mix the powdered sugar and milk to make the glaze. Drizzle the glaze over the cooled bread.
